A Tiger Barn Cattery Wine Recipe

It's worth noting that even with your own Blueberry bushes, it's going to be difficult to justify using more than 2 Lbs of Blueberries in one wine recipe. So this blueberry and blackberry wine recipe is for people who have a few blueberry bushes and access to a lot of blackberry brambles and hedgerows.

1.5 - 2 Lbs of Blueberries
2 Lbs of Blackberries
Half a pint of strong tea or a half Lb of Raisins
1 gallon water
2.5 Lbs of sugar
1/2 teaspoon of pectolase
1 teaspoon citric acid
1/2 a lemon juice
1/2 teaspoon of TronOzymol
1 crushed campden tablet
1 tsp of yeast nutrients
Bordeaux Yeast

This blueberry and blackberry wine recipe is more reliable if you only add as much sugar as you need to reach an SG of say 1.080 - 1.085 and that will almost guarantee a dry ferment at 12%.

Sunday 8th August 2010

Lovely day so we drove over to Luke's Fruit Farm near the southern fringe of Dartmoor National Park. The blueberries were riper on this trip than a few weeks previously, quite sweet, but without netting the birds had fed on enough to make picking the best more time consuming.
The grower mentioned that he was pleased we'd come as for some reason Brits don't seem to know what an excellent fruit they have here. We picked 3 Lb of Blueberries and paid £11.80 for the privilege and experience. We ate handfuls on the way home, and made liberal additions to that week's morning porridge.

Monday 9th August 2010

It always disturbs me squishing perfectly good fruit, moreso when it's rare or perfectly sound as they were ... After a moment's contemplation, I put my ethical thoughts to one side to break, squish and maim 2.5 Lbs of Blueberries into fermentation bucket.


Added 1 Lb of raisins.
1 crushed campden tablet
8 pints of boiling water

Tuesday 10th August 2010

Added 1 Lbs 12 Oz of sugar and stirred til dissolved
1/2 teaspoon of pectolase
1/2 a lemon juice
1/2 teaspoon of yeast energizer

Added Bordeaux yeast and 15 mins later stirred it in.

Monday 16th August 2010 SG: 1.020

Strained and squeezed pulp into demijohn

2nd Rack

Topped up with 4 Oz of sugar syrup SG: 1.006
No fermentation whatsoever. Oops.

Activated a little yeast nutrient and Bordeaux yeast in a glass and added it to the gallon ... will anything happen? .... Nope.
