A Tiger Barn Cattery Wine Recipe

This is an elderberry and apple wine recipe, but whatever wine recipe you choose, if it contains elderberries, then you don't need tannin - You don't need to add grape juice, raisins or tea ... Elderberries have a strong colour and add a real heavy body to the wine. It will take an Apple wine from a warm amber to a deep red with little effort. You can help the body and colour further by using some red Aldi grape juice.
One other thing, while I totally love elderflower, I really dislike a strong elderberry flavour, but when elderberry wine matures, the cough sweet flavour disappears leaving a wonderful wine to eat with red meats.

2 Lbs of Elderberries
3 Lbs of windfall Apples
7 pints of boiling water
1 crushed campden tablet
1 tsp pectic enzyme
1 tsp citric acid or 1 lemon's juice
2-3 Lbs of sugar
1 tsp of yeast nutrients
Good yeast for Red Wine ... I used Young's Burgundy yeast.

My rule is of thumb is really only add as much sugar as you need to reach an SG of say 1.080 - 1.085 and that will almost guarantee a dry ferment at 12%.

This is almost the last wine made with Devon fruit picked in 2010 because I've been cruising the freezer opening bags and tipping things out and poking about. I've had a few Bramleys blown off in the last few days, real nice ones, but they are still windfall. Some have been made into Sloe and Bramley Jam, some have been eaten in porridge and the rest ended up here ... then there was a big storm, but that's the next wine!

Sunday 9th October 2011

Took 2 lbs of frozen Dartmoor elderberries from the freezer
Cut up 3.5 Lbs of windfall Bramleys
Poured 7.5 pints of boiling water over the apples and elderberries and gently warmed until apple chunks were soft. (20 mins)
Added crushed Campden tablet before bed.

Monday 10th October 2011 AM

Added 1 tsp Pectolase
1 tsp TronOzymol

Monday 10th October 2011 PM

Added 1 1/2 tsp of citric acid
Youngs Burgundy Yeast

Stirred every day for 4 days

Friday 15th August 2011
Strained Must through nylon bag, 3 times didn't squeeze.
Mixed in 2 Lb of sugar for a possible blend.
SG 1.080
