A Tiger Barn Cattery Wine Recipe

An apple wine recipe can vary a lot in preparation alone, but this recipe gives you the basic ingredients. You can add honey or spices or top up with any other wine flavours you like.

3.5 - 4 Lbs of Apples per Gallon
6 pints of water
1 litre of preservative free white grape juice
1 crushed campden tablet
1 tsp pectic enzyme
1.5 - 2 Lbs of sugar
1 tsp Pectolase
2 tsp TronOzymol yeast nutrient
Ritchies Sauternes wine yeast

Careful how much sugar you add. Use a hydrometer and stop when you get to between 1.080 and 1.085. This will be enough to give you a respectable 12% dry white apple wine.

All these Apple wines should be named Shepton Road Apple Wine because the Apples were picked between Castle Cary and Shepton Mallet over a period of a few days. I literally had bags of them all stored in the shed. There were maybe 9 varieties in 9 bags and even some russets I picked while I was collecting Damsons near Evercreech (though I may have eaten those). Every hedgerow crab apple, every cider orchard leftover, or discarded core was growing roadside in what I regarded as an ignored state and relative profusion. It was a good idea to collect some rather than let them fall off for another year.
OK, so I didn't want to cut up 20 Lbs of apples and I knew a cider-maker in the village had a pulper so I went to see him.
Chris has an amazing set up. A self-built press from Steel I-Beams and pressed using a heavy duty truck jack in the shed. When I arrived with my carrier bags there were just tons of cider apples in barrows, pail and barrels strewn around the shed doorway. All the apples had to be sorted, washed and then put through the pulper, then moved to the press to be squished.
I couldn't resist this experience. In exchange for having my apples pulped and also my 24 quinces, I spent a couple of afternoons and evenings learning the art of cider-making and tasting the raw juice, which was out of this world magnificent. Over the two days I helped create 20 gallons of pure apple juice and pulped all my apples and quince and started my wines.

As an aside, I brought a bottle of apple juice back with me, drank some and left it in the cupboard. What I hadn't counted on was that apple juice that hasn't been treated with a campden tablet to kill off all the natural strains of yeast will ferment. So when I came to take a glass a few days later, the contents exploded covering two kitchen walls with cider spatter patterns!

Picked over 20 Lbs of crab, cooking and eating apples from here to Shepton Mallet - 8 or 9 different varieties over a few days.
Cored and pipped them and used Chris's pulper to shred the lot.

Poured over 8 litres of boiling water
Added 1 litre of Aldi Rio D'Oro white grape juice
